🌮 Celebrating National Taco Day Under the Full Moon

Sometimes the best meals are the ones that bring everyone together without much planning. For my family, that usually means tacos. They are easy, customizable, and somehow never boring.
This year, National Taco Day just happens to land on a full moon, which makes it even better. There is a small place near me called Cactus Cafe that does dollar tacos every full moon night after sunset. You can order up to three, any kind you want, as long as you show up in person. My kids love it. It has turned into our little monthly tradition.
We grab a table, order our tacos, and play chess while we wait. Someone always asks for chips with queso or salsa, and somehow the night feels relaxed and familiar, no matter what kind of day we had.
Over time, that full moon taco night became something we look forward to. It is not about doing anything big or fancy. It is just about being together, eating something simple that makes everyone happy.
Flour or Corn?
There is always that question at the table: flour or corn tortillas?
Corn tortillas are lighter, gluten free, and a little more rustic. They have more fiber and magnesium, which is great if you like a bit of chew and earthiness. Flour tortillas are softer, mild in flavor, and perfect for heartier fillings.
Personally, I like both. I mix and match. But my family loves carne asada on flour tortillas. It is the clear winner every time.
Building a Better Taco
The beauty of tacos is how flexible they are. You can make them light, rich, protein packed, or completely plant based. A few simple tips to make them balanced and satisfying:
• Start with a solid protein such as carne asada, grilled chicken, shrimp, beans, or tofu.
• Add vegetables for color and fiber such as peppers, cabbage, lettuce, onions, tomatoes, or avocado.
• Choose sauces that bring flavor without overdoing it such as salsa verde, pico de gallo, or yogurt based crema.
• Add a source of healthy fat like avocado or olive oil for better absorption of vitamins.
Tacos can fit into any kind of eating pattern when they are made with care. It is one of those foods that feels just as right on a busy weeknight as it does on a special occasion.
